Loaf was ready after 35. I baked mine all on one cookie sheet at 325 degrees for the first 20 minutes, stirred and then turned it down to 250 for about 10 minutes and stirred again, then baked for 10 minutes more. Hi there!
I just wanted to thank you so so much for your brilliant work. Hi Dana, I lowered the sugar to 1 tbsp and used 1 1/2 tbsp. Top with remaining walnuts. I would recommend turning the pan halfway through if you don’t stir it (which I loved the results of!). I can’t shake the fact that banana bread is still my favorite baked good (probably of all time), even after all these years. Thank you for sharing this recipe. One thing – I’m allergic to nuts. This is delicious! We have nut allergies, so we substituted a combination of raw PUMPKIN SEEDS, raw SUNFLOWER SEEDS, and unsweetened COCONUT FLAKES for the nuts.

Hi Richelle, we don’t have a banana bread recipe with applesauce, but we have an Apple Carrot Snack Cake with both apple and banana in it. If I leave out the flaxseed will it still be as good? The cultures in the yogurt digest the lactose. I am glad you said I could use any other puree in place of the banana. I read in the comments you do not recommend coconut flour as a subtitute, well..read it too late.. I was also wanting to try spelt flour!
I’ve found almond meal, when blended with oats and the gluten-free blend, just creates a nice texture in vegan baked goods. Of course I will be giving a link to your lovely site. Glad you’re enjoying this recipe so much! The only untruth in this recipe is that it will last a few weeks – that is just impossible. Not very sweet. The outside pieces which got a little browner are causing me to nibble more and more. So I highly recommend it with almond milk :D. Yes, technically I’m lactose intolerant too, but I can’t help eating dairy sometimes. I don’t like things too sweet. my family loves it.
Made two loaves now. Coconut flour is extremely drying. I’d totally buy it ;D In the meantime, granola for the win. You could but it obviously won’t be as sweet. This is my go-to granola now!
Thanks! – My modifications: I used pecans (3/4c) and pepitas (1/2c), skipped the sugar, reduced the honey to 1/4c, used less coconut oil (3 tbsp), and used chia seeds instead of flax. I unfortunately stirred mine during cooking a bit cos i didn’t want the nuts to burn, so I don’t have as many clusters as i would like.. but then again, i’ll be making this again in oooh.. 1 day? I can’t even with this granola! Thank you. Ta-da! So good! It’s super helpful for us and other readers. Hmm, I’ve never tried that. Modifications: 1 cup whole wheat flour for 1 1/4 cup GF blend (it seemed pretty thick without the extra flour), almond flour instead of meal, brown sugar for coconut, less maple syrup, and natural peanut butter instead of almond. John loves his granola over yogurt. At the end, I just turned off the oven and let it crisp up in there while the heat was dissipating. This recipe definitely made my life a lot better ;~), Made this recipe today with my 2.5yr old daughter, it was quick and easy but most of all it was delicious! Thanks! I made this today and I was really curious to see what the texture would be like as it’s the first time I’ve not used egg in a cake from a recipe – I’ve experimented without egg but I haven’t always had success!

I had vanilla and banana extracts and it didn’t occur to me until after I made it that it didn’t call for the extract. You are on a Minimalist Baker recipe roll!
